We are blessed to have another day to celebrate, especially as my son Jafet celebrates another year of life. Welcome to our cooking channel, "Cooking with Areli and Yareli!" Today, Yareli is out, but I am here to guide you through preparing this flavorful recipe.
Ingredients
To make this traditional Kak'ik, we will need the following ingredients:
For the Kak'ik:
- 1/2 large onion
- 2 chiles raisins
- 6 guajillo chiles (known as pasilla in certain regions)
- 6 large red tomatoes
- 7 cloves of garlic
- 1 red sweet pepper
- 600 grams of green tomatillos
- A bunch of mint
- A bunch of green onions
- A bunch of samat (also known as Mexican cilantro)
- Fresh cilantro
- Ranch chicken
- 2 tortillas (soaked)
- Allspice
- 1 tablespoon of achote (annatto)
- Salt and consommé (to taste)
For the Tamalitos Blancos:
- 3 cups of maseca flour
- Salt
- Oil (of your choice)
- Banana leaves or machan leaves for wrapping
Preparation Steps
Prepare the Chicken Stock:
- Begin by splitting the chicken into large pieces and boiling it in a pot of water.
- Add the chopped onion and a few teaspoons of consommé to enhance the flavor.
- As it starts to boil, foam will form on the surface; patiently skim this off.
Blending the Ingredients:
- Once the chicken is cooked, roast allspice and then quickly remove them.
- Roast the guajillo chiles lightly to avoid bitterness. Once done, set all roasted ingredients aside to cool.
Make the Sauce:
- Blend the roasted tomatoes, garlic, soaked tortillas, achote, and allspice with a bit of water until smooth.
- While blending, tie the mint, green onions, and cilantro into a bundle and set aside.
Combine Everything:
- Add the blended sauce to the boiling chicken stock along with the herbs. Simmer for about 20 minutes to allow flavors to meld.
Prepare the Tamales:
- Meanwhile, knead the masa by mixing it with salt, oil, and water to reach a doughy consistency.
- Wrap small portions of the dough in banana or machan leaves and steam for 20 minutes.
Serve:
- To serve, ladle the Kak'ik into bowls and accompany it with the tamalitos blancos, fresh avocado, and enjoy a delightful birthday meal.
