This is the best version of Mochi Butter Cake I’ve made!! Sweet, chewy and flavorful! All you need is rice flour and you can make so many varieties! What should I make next?? Kheer Mochi Bars: Rice Pudding on the Go! Yield: 12-15 bars Prep Time: 10 minutes Cook Time: 50 minutes Ingredients: - 2 cups evaporated milk - 1/4 cup unsalted butter, melted - 2 large eggs - 2 cups mochi rice flour (sweet glutinous rice flour) - 1/2 teaspoon baking powder - 1 1/2 cups granulated sugar - Pinch of salt - 1/2 teaspoon ground cardamom - Pinch of saffron - 1/4 cup chopped raisins (optional) - 1/4 cup chopped shredded coconut - chopped pistachios for topping - chopped almonds for topping Instructions: 1. Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper. 2. In a blender, combine mochi rice flour, eggs, sugar, melted butter, baking powder, evaporated milk, cardamom, saffron, and salt. Blend until smooth and well combined. 3. Pour batter into the prepared baking pan. If using, sprinkle the top with raisins, coconut, pistachios, and almonds. 4. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. 5. Let the kheer mochi cool completely in the pan before cutting into 12-15 bars.
